I started my culinary venture in 1993 at Elmhurst Golf and Country Club when I was 16 years old. I then went to Red River College to further my education. From there I went to Larter’s Golf and Country Club to work under Tom Pitt.

JD Braid

Position: Team Captain

JD attended South Winnipeg Technical College and Red River Collage for his theoretical portion of his culinary career.  His on the job training came from three seasons at Niakwa Country Club followed by a year at the Chateau Lake Louise in Alberta.

Klaus Leiendecker

Position: Team Member

Klaus Leiendecker’s dream of cooking stemmed from his Father, Manfred Leiendecker, who was a pastry chef his whole life. By watching his Father work, Klaus’ interest in the culinary field grew. In 1992, Klaus attended Red River Community College in which he graduated with honors in achieving a 97% or higher average in the Commercial Cooking Course.

Jeremy Bender

Position: Team Member

Originally from Winnipeg, he apprenticed at Club Regent Casino and once passing the Red Seal Exam moved on to work at The Fairmont Chateau Lake Louise. During his tenure there, he was offered a transfer to The Fairmont Southampton Princess.

Mary-Jane Feeke

Position: Team Pastry Chef

Traveling to South Africa over 12 years ago, M-J began her journey to becoming a chef. Having already worked in the food industry in Canada she had an interest in letting it become her choice for a career.

John Feliciano

Position: Team Member

John Feliciano started his Hospitality career after graduating with a degree in Hotel and Restaurant Administration from the University of the Philippines in 1992 being one of the opening team of the Cost Control department of the Manila Diamond Hotel, a five star deluxe hotel in Manila.

Brent Prockert

Position: Support Chef

Chef Brent has been cooking for the past 25 years. Starting his career at the round table restaurant in Winnipeg where he got his first taste for the industry. Later enrolling at Red River College and working at the Sheraton Downtown Winnipeg.

Julian Helman

Position: Support Chef

I began my career in the Culinary Industry in 2004.   I enrolled in the apprenticeship program for cooks at the Saskatchewan Institute of Applied Science and Technology in my home town of Saskatoon.
